Hey Guys have I got a treat for you today! Here is my second recipe in the clean eating series and i just know your gonna absolutely love it as much as i do! I do not exaggerate when i tell you this crust was so good that it almost made me regret ever having eaten gluten in my life! Its week two and i have really seen some improvements in my health as a result of reducing my carbohydrate intake and i am really enjoying learning my body through this health journey. Week 2 of my health challenge has been a success and I’m happy to report that I’ve hit the five pounds down mark at the beginning of this week! Kudos to me for self-discipline which is not my forte when it comes to food by any stretch of the imagination! I haven’t had intense cravings and in fact, replacing my old favorites with some new favorite replacements makes me feel like I’m not missing out at all! At the end of my thirty day challenge I will still enjoy family favorites and traditional recipes in moderation on occasions and when dining with friends and family but i am happy to commit to eating grain-free and low-carb options as part of my lifestyle going forward!
This pizza crust is amazing guys! No offense to my gluten-free foodies, but i always dreaded going carb-free or trying gluten-free options in the past because lets face it, the textures and flavors were not at all what my palate is used to…I’ve tried gluten-free products with disdain and its well known in these parts that i am a bonafide foodie and not willing to sacrifice flavor in the name of health! How i see it is….if its healthy and natural it should definitely be delicious because after all, we were given the gift of taste to taste first & foremost the plentiful bounty of natural foods that God has provided for our enjoyment! So i told myself that if i started this new clean eating series i would bring to you some delicious grain-free options your whole family will love! I nailed it with this crust guys its flavorful and has a great texture! After much research and looking at many reviews of what we the people wanted in a low-carb/gluten-free crust i decided that i too would join the craze that is Fatboy dough….because carb lovers or haters everywhere can agree it is really, really good! I couldn’t leave well enough alone, so i pushed the flavor dial way up by adding more substance and a ton more flavor to the original recipe! My crust uses a little more cheese and cream cheese then the original fatboy dough and i really prefer to freshly grind slivered almonds as opposed to using store-bought almond flour. Trust me, it lends more flavor and texture without tasting almondy, in fact i didn’t taste the almond at all! I also added fresh spinach leaves and garlic to the crust to take it up a notch so don’t knock it until you try it folks! I really hope you’ll make this as soon as possible! Even my three picky children and my carb loving husband LOVES it, so i just know it will be a winner in your house too! FOR THE DOUGH:
- 1 1/2 cups slivered almonds
- 3 cups shredded mozzarella
- 4 tablespoons cream cheese, softened
- 2 eggs
- 1/4 cup fresh spinich leaves, finely chopped
- 1 1/2 tablespoons garlic powder
Start by preheating your oven to 425 degrees fahrenheit then cover a large pizza tray or baking pan with parchment paper.
Now combine your cream cheese and spinach with your shredded mozzarella then microwave for about a minute and a half until it is completely melted then mix very well. Allow to cool.
While your cheese mixture is cooling, let’s make the fresh almond flour. In the bowl of a large food processor, add 1 1/2 cups of slivered almonds and crush on high pulses until it is finely ground and resembles wheat flour. Remove to a big bowl and top with garlic powder and mix well.
Your cheese mixture is cooled enough by now, so add the eggs and blend well. *It’s important to let your cheese cool first so that it won’t cook the eggs.
After blending your eggs into the mixture, add your fresh garlic almond flour and mix well to combine.
Place the finished dough gently on the parchment paper and using your hands gently flatten the dough with your hands molding it to your desired thickness and size and beware the dough is sticky so handle with care.
Prick all over with a fork and bake at 400 degrees for 8 to 10 minutes.
Spicy Margherita Topping
- 1 Grain-Free Pizza Crust, traditional pizza crust or flatbread
- 1/4 cup pizza sauce
- 1 to 1 1/2 cups shredded mozzarella or vegan cheese
- 1/4 cup grilled chicken, chopped (Optional)
- 1/4 cup diced tomatoes
- 1/4 cup sliced cremini mushrooms
- 1/4 cup chopped spinach leaves
- 1 tablespoon pickled jalapenos (Optional)
- Olive Oil, for crust
- Cajun Seasoning, to taste
- Italian Seasoning or Dried Basil, to taste
- Red pepper flakes, a pinch
Preheat your oven to 400 degrees Fahrenheit and using your delicious, freshly made, grain-free crust or a crust of your choice, top it with pizza sauce, cheese and the above toppings then sprinkle lightly with Cajun seasoning, dried herbs and a pinch of red pepper flakes. Lastly, lightly dress your crust with a little olive oil and bake for about five to eight minutes depending on desired crispness. Enjoy!
