Kendra’s House Garam Masala Seasoning

In this cold, wet weather in the dead of winter I can only think of two types of food that take the chill from my bones and offer me soothing sustenance. One being comforting & heart-warming soul food which is beloved and passed on from traditional southern families or what I was raised on….a tantalizing array of spices and full-bodied flavors that take you on a exotic culinary adventure to the sizzling warmth and spices in the Orient, Caribbean, Africa & Hispaniola! Not everyone likes flavor, some folks are “Plain Jane” as it pertains to food but I was raised in New York City where you could taste the entire world in a span of a few blocks. Lol

Today’s recipe is sacred….real talk in the culinary repertoire of bona fide chefs! Everyone who’s anyone loves eating delicious Asian inspired creations. Who doesn’t love the food of China, Japan & Thailand just to name a few but today i’m taking you on a tour of India the home of curries…garam masala, my friends is the king of curry powder! It literally means “hot spices” but it is so much more than that. Don’t think heat in the sense of hot sauce and peppers rather think warming spices like cinnamon, cloves & allspice. Here in the states we only use these seasonings in sweet preparations but throughout the world they are traditionally used in savory meats, veggies and other preparations. Also, they are not purely for taste but are medicinal and beneficial to health & wellness in a Ayurvedic sense. I…like millions of people around the world have diabetes & autoimmune disease and i can personally say that a healthy diet including seasonings like this have gone a long way in helping me keep my RA & diabetes in remission so give it a try. The tumeric in garam masala has also helped fight inflammation in my body and helped stabilize my blood sugar along with the cinnamon. This seasoning is amazingly fragrant & will turn anything it touches into pure gold! It makes everything absolutely delicious & the variations are not concrete, in fact in India it is made a little different in each home since every good wife has her own custom blend! This is mine and I love it because mine incorporates my Caribbean heritage in its flavor profile. East Indian cuisine was brought to the Caribbean centuries ago and plays a vast role in the flavors of the Island cuisine that people around the world adore. A little goes a long way, trust me folks there is power in a pinch when it comes to garam masala! I love this stuff. I use it to make my delicious Indian chicken! Also Butter Chicken, Tikki Masala, Curry chicken, a plethora of carribean recipes like my husband’s amazing Calypso Rice. Also, My Indian carmalized onions,spiced sweet potatoes, veggies, desserts… the recipes go on and on so try a few and discover the awesomeness that is garam masala!

Ingredients

  • 3 tablespoons Jamaican curry powder which is my unique twist (includes a mixture of Tumeric, Black Pepper, Coriander,Fenugreek, Cumin, Red Pepper, Ginger, Cloves)
  • 2 tablespoons ground coriander
  • 2 tablespoons ground cumin
  • 1 1/2 tablespoon allspice
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon dried fennel

Directions

Mix very well and smell for fragrance. Keep in airtight container or bag for up to six months. Use about 1/2 tablespoon to 1 tablespoon in most recipes because it is very pungent so a little goes a long way.
